Recipes : Dinner tonight, tomorrow & the next day



Ever been in the mood for some fish, but can’t afford the time to put it all together? did you know that you can have just about any kind of seafood steamed with yummy spices at Publix at no extra cost? turn one easy meal into three with the following recipes.

YOU'LL NEED:
6 Affordable Fresh tilapia Fillets
(steamed with your favorite spice: lemon, creole, etc.)
head of broccoli
3 lbs. new red Potatoes
bread Crumbs
2 Eggs
Chopped Scallions (or onions)
tbsp or two of olive oil
Cup of baby Carrots
1 Can Coconut milk
1 Chicken bullion Cube
tbsp Green Curry Paste
tbsp Soy Sauce (or more, to taste)


DINNER TONITE

Steamed Fish, New Potatoes & Broccoli

Place the steamed fish in the microwave while you get two pots of water boiling, one for your broccoli, one for your potatoes. Start the potatoes first – they’ll take about 15 minutes. After 10, start steaming (or boiling) your broccoli. Add salt & pepper. Plate your food. dinner is served!!


DINNER TOMORROW

Fresh Fish Cakes & Salad

Preheat oven to 350°. You should have about two pieces of tilapia already cooked and refrigerated. Either cut or crumble, and place in a mixing bowl. Add a cup of bread crumbs and mix in eggs and onions. Pour oil onto a cooking sheet, then pat your fish mix into patties.
Cook for about 30 minutes, flipping after 15. Can be pan-fried if you prefer. then, fix up a salad and dinner is done.


DINNER THE NEXT DAY

Thai Potato Soup

Add your leftover potatoes and 3 cups of cold water to a medium-sized pot, bringing to a simmer. now add your coconut milk, chicken bullion, soy sauce, and a tablespoon of green curry paste and baby carrots.

Simmer until carrots are tender, about 15-20 minutes, then throw in leftover broccoli (or fresh if you have it). Slice some of your favorite bread and you’ve got another delightful dinner!
